To make bread flour:
In a mortar and pestle, combine all the ingredients except butter and mix well. Put water in a pan on top. Add the flour mixture to the skillet and toss well to evenly coat. Using a whisk attached to your knife to separate the liquid from the flour mixture, slowly whisked together until well coated.
Cook for a few minutes. After the bread is cooked, remove the pans from the oven and set to prepare for next step.
